For nearly my entire adult life, I have struggled with the making of the perfect fried egg. My frustration mounted when the egg would either stick to the pan or end up “rubbery” in a non-stick pan. It was not until I purchased my beloved cast iron frying pan, that I discovered that the key to preparing the perfect fried egg is in the pan. Below is my favorite simple method for preparing fried eggs.
¾ teaspoon organic coconut oil
Salt and pepper to taste
Saute 3/4 teaspoon of organic coconut oil in a preheated cast iron pan. Using a knife, crack the shells of each egg, and gently empty the eggs into the frying pan. Cook for approximately three minutes. Use a thin metal spatula to loosen the eggs from the pan. Season with salt and pepper. Place the pan into a 400 degree oven for 1-2 minutes until the egg yolk is partially set. Remove the frying pan from the oven and let sit. Using the metal spatula, loosen the eggs from the pan and place on a plate. Garnish with your favorite fruit.
