This broccoli cheddar soup is the ultimate in “comfort food” for me and it is so simple to prepare. The texture is thick and hearty which makes it perfect by itself, or pair it with a side salad or sandwich for a more satisfying meal. The chili powder and paprika add a “bite” that increases the intensity of this soup. This recipe makes two bowl servings or four cup servings.
3/4 cup finely shredded cheddar cheese
1 1/2 broccoli crowns, steamed
1/2 cup whole milk, plus extra according to preference
4 tablespoons chopped onion
2 chicken bouillon cubes, crushed
1/4 teaspoon chili powder
1/4 teaspoon paprika
Garlic powder, onion powder, and crushed black pepper to taste
Combine all ingredients in a blender and blend until well combined. Transfer to a medium size sauce pan and heat on medium heat until the soup begins to bubble. Add more milk one quarter cup at a time until desired consistency is reached. Pour soup into a bowl, and top with shredded cheddar and croutons.
